I haven't seen any notes on this, but I may be wrong. Does the deck get shuffled at all? Would counting cards benefit me in this competition, or is it all random, thus meaningless to do so?

The deck is shuffled at the end of every round, so card counting in the way you seem to be talking about (like in Blackjack, which isn't shuffled every round) wont work.
However each card drawn isn't completely random of course, so during the round you can figure out how many of each card is left in the deck and thus calculate the chances of a specific card being drawn next. For example in a full deck the chances of drawing an Ace is 4/52. If you draw an Ace, the chances of the next card drawn also being an Ace is 3/51.

Yes, each card would have to be uniformly randomly chosen from the set of remaining cards. Sorry for being unclear.
Disclaimer: I haven't actually seen the code for any of this, however most of what I have said in this thread is just how poker works. In my opinion if this poker engine works differently to what I have described here, it is probably broken, but I'm sure it's not broken. :)
